Every Heimat product exists in two varieties. Both grow on the same Swiss fields – their character parts ways only later: in the curing method and in the duration of fermentation. It is not the recipe that decides, but time.
The aroma is not made in a laboratory. It emerges over weeks of fermentation in Payerne – shaped by the soil, by the summer, by patience.
